Chicken Bog


Chicken bog, Perlo, Chicken and Rice, we call it by those names here in the South.  I suppose the one in this picture would be called Perlo because it has chicken, sausage and rice.    


This could be called Chicken and Rice

The Chicken Bog would be more moist until the rice clumped together with the moisture.




You may use whole chicken  or large hen cooked until tender
You may also use chicken breasts, thighs and legs your choice (I used 4 for this recipe) 
Cook Chicken in pot with 1 or 2 bay leaves
celery 1 rib
onion 1 small
black pepper few dashes or tsp pepper corns
juice of half lemon squeezed in (optional)
Cover with water
 (keep in mind to allow extra water to be sure you have enough to make your rice. Extra water is better than not enough for your broth) 
cook until fork tender




Tip:  If you are making your rice right away and don't have time to cool your broth:
Take a paper towel that you twist and pull through top of broth to collect as much fat off the top as possible.

Remove your chicken from pot to cool
Strain your broth and discard veggies 
Measure according to how much you will need for your rice
This will depend on the amount you want to cook
You have to have at least twice the amount of water as rice
(optional: I usually add 1/2 cup more broth for my rice to make it a little more moist)





Pull your chicken off bones and cut or pull into small pieces
Add your broth after measuring back to pot 

Add sausage to broth in pot to simmer while pulling or cutting chicken




I like to add beef smoked sausage sometimes.
I usually use 1 pound per 2 cups of rice
I also like to use a small pack of Mahatma Yellow Jasmine Rice along with
long grained white rice

Optional
**Another addition which I use rarely, but it is very good
a large potato cubed add when you add sausage to cook fork tender **



Bring broth to boil
Taste to see how much salt you should add
(keep in mind if you are using the jasmine yellow rice it will add salt so use less salt to taste)
Add rice
Add chicken
Stir all ingredients together
Turn down heat to low
Cover when possible
Do not lift lid 
Cook at least 20 minutes

Serve warm
good with slaw, or a fresh salad
hush puppies





On this day I had fresh broccoli
and I wanted to have something sweet 
I chose the quick route which I rarely do
I cooked a  Mrs Smith's Dutch Apple Pie
It was delicious
