Chocolate Sour Cream Pound Cake


**Preparation**
Take 6 eggs, 1 cup sour cream, 2 sticks of butter out of refrigerator to warm to room temperature.


RECIPE

Ingredients:

Preheat oven to 325 degrees
Grease and flour tube cake pan or 10 inch pan of your choice.
 (I used a 10" x 4" Wilton Cake Pan for this cake without center tube)

2 sticks butter softened
3 cups sugar
6 eggs take out of fridge to warm-- room temperature
1 cup sour cream left to warm to room temperature
 2 1/4 cups cake flour 
3/4 cup Hershey's cocoa 
1 teaspoon baking powder
1/4 teaspoon salt
1 tablespoon real vanilla flavoring OR 2 Tablespoons Watkins Imitation Vanilla flavoring
** note most recipes call for 1 teaspoon of vanilla flavoring and that is what you can add if you wish;  we just use lots of vanilla and love it.  The choice is yours.**


I love the cracks in the crust because I just happen to love a crusty, flaky, delicious crust on my baked goods.


 Instructions:

Cream butter in mixing bowl of stand mixer
Add sugar beat well until it is dissolved really good
Add eggs, one at a time, beating until mixed before adding another.
Do this after each egg addition.
Add half of sour cream
mix thoroughly
Add half dry ingredients**(flour, baking powder, cocoa)
mix thoroughly
Add the rest of the sour cream, mixing well
Add remainder of dry ingredients and mix thoroughly
Add vanilla flavoring

Bake for 1 hour and test with toothpick for doneness.  Toothpick will come out clean when done.
It usually takes mine about 1 hour and 20 to 30 minutes.
Cool on wire rack for 5 minutes
slide flat spatula around cake in pan
slide small spatula or butter knife around middle tube
carefully turn pan over rest cake in hand or a flat plate then quickly put on wire rack to cool.  Then turn cake over to cool the other side.


 If your cake is as crusty as this I would cool like shown because you will want to save the wonderful crusty crumbs on your cake so every piece will be delicious.

I served ours with fresh strawberries and freshly whipped cream!  Oh my goodness there is nothing like it!
