Cottle Strawberries
These are some of the tried and true recipes from Cottle Farms
I personally have made all of them and they are delicious.
The glaze is wonderful and the strawberry pie tastes just like our Shoney's Strawberry Pies
which were wonderful. The cake is so rich and so delectable, I could not make enough of those when I used to sell fresh berries.....yummy...It is made from a cake mix but you would never know it!
Make some of these delicious deserts while the local fresh fruits are available.
Strawberry Glaze
2 cups water
1 1/4 cups sugar
1/4 cup corn starch or flour
1 small box strawberry gelatin
Mix together all ingredients except gelatin. Cook on medium heat stirring to prevent clumps and boil until clear. Add 1 small box strawberry gelatin to hot mixture. Cool. Will stay in container in refrigerator for a long while.
Strawberry Pie
3 tbsp. cornstarch or 4 tbsp flour
3 tbsp strawberry jello
1 cup sugar
1 cup water
1 pint fresh strawberries, cut into quarters
few drops of red food coloring
1 pie shell, baked
Combine cornstarch, jello an sugar in saucepan. Add water and cook over low heat until thick.
Cool. Fold in strawberries. pour into baked pie shell. Chill. Top with whipped topping
Strawberry Cake and Icing
1 box Duncan Hines Cake Mix
3 tbsp. plain flour
1 package strawberry Jell-O
1/2 cup hot water
3/4 cup vegetable oil
3/4 cup mashed strawberries
4 eggs
In large bowl mix dry ingredients. In a sauce pan dissolve Jell-O in hot water. When dissolved, pour into dry mixture; add remaining ingredients, stirring well and then pour into two 9" pans. Bake at 350 degrees for 30 minutes.
Icing
1 box powdered sugar
1/2 cup strawberries (mashed)
1/2 cup chopped pecans or walnuts
1 stick butter (melted)
Mix ingredients together and spread on cake. **note** if strawberries are very juicy, use 1/4 cup
