Pineapple Mango Salsa

I have a pineapple and mango going bad with lots of lime what am I to make?  Salsa of course.

Carly happened to give me a great gift Pioneer Woman Cooks 


I bought some salmon the other day so there's my answer.
I did have a few problems though.  I had no jalapenos, I had no cilantro.  Oh well, what do we in the country do when out of something?  We make do and we substitute.
I used celery leaves and a little bit of dried basil instead of cilantro.
The red onions from our Sam's Club are very hot so I added a little cayenne pepper..Hot enough without the jalapeno! I added a green bell pepper too.  Guess I turned it into my own make do recipe!

Ingredients

1 whole fresh pineapple peeled and diced
1 large mango diced
1/2 red onion finely diced
1 lime juiced
1 jalapeno sliced and chopped seed added or taken out
Cilantro Chopped
Sprinkle of salt
Dash of sugar (optional)
I added a chopped green bell pepper too (not called for in recipe)
Combine all ingredients and stir well
Serve within an hour

This is especially good with chicken or fish.

My quick and easy Mango Salsa
1 mango chopped finely
lemon juice squeezed over the mango (Just a little)
Canned Pineapple Chunks (add as much as you like)
Red, Yellow, Orange and Green Bell Pepper chopped finely
1 long sprig of Dill pulled off and added
1/2 tsp. sugar
Salt and Pepper to taste

Serve and enjoy!
