Key Lime Pie








 I found these Key Limes, they are made by Borden
Also Eagle Brand Condensed Milk

Carly gave this beautiful Juicer.  I love the color and it works so well.

You'll need some lime zest and 4 eggs

You'll need a Graham Cracker Pie Crust

Ingredients:

  • 1/2 cup fresh lime juice (not the bottled lime juice)
  • 1 to 4 teaspoons grated lime zest (you decide)
  • 4 egg YOLKS room temperature
  • 1 can Eagle Brand Sweetened Condensed Milk
  • 1 Graham Cracker Crust click HERE for recipe

Preheat oven 325 degrees

  • In a medium mixing bowl whisk the egg yolks then add the lime zest
  • whisking good to mix for about 2 minutes
  • Add the condensed milk and whisk until smooth
  • Add the lime juice whisk well
  • Cover with clear wrap and leave at room temperature to thicken for about 30 minutes

Prepare and bake your crust now

  • While your crust is still warm add the filling
  • Bake 15 minutes or until set
  • When you move pie slightly the middle will be set
  • Remove from oven
  • Cool completely
  • Chill for 3 to 4 hours

Top with your favorite Whipped Cream

My Notes**
**Taste your lime juice if it is extremely strong or tart maybe use less than called for.  You might also want to add 1 to 3 tsp. instead of 4 for the grated zest.  Mine was a little tart for me.  Otherwise this is a good pie People say that Key Limes and Persian Limes taste virtually the same.  I personally think the the Key Limes are more flavorful, they are stronger, however reason for this note..**
