Flounder Batter


Do you like very fresh flounder filets coated in a fish n chips kind of batter deep fried quickly and eaten while it hot and crispy?  Chuck loves this...and I admit I like it every now and then myself!



Ingredients

1 cup all-purpose flour
1 Tbs. corn starch
1/2 tsp. baking powder
1/2 tsp. baking soda
1 tsp. salt
1/8 tsp garlic powder
1/8 tsp. onion powder
1/4 - 1/2 tsp. lemon pepper
1/8 tsp. Dried Dill Weed
1 cup ice water
buttermilk to cover flounder filets
cooking oil to cover pan or fill deep fryer

Instructions

Soak flounder fillets for 1-2 hours in the buttermilk

Mix all of the above dry ingredients well
When you are ready to fry 
Preheat oil
Mix ice water into dry ingredients mixing well for Batter


Preheat oil to 350 degrees
Take fillets from buttermilk drain off excess
Dip into batter
Fry until golden brown in oil 350 degrees watching and turning when necessary.
It will only take a few minutes to cook your fish.



Remove and drain on paper towels, or on rack with paper toweling/wax paper underneath to catch the drippings.  The rack gives you crisper fish...



Fried Fresh Flounder served with Fresh Cucumbers, Sliced Tomatoes and Squash from the garden!
Delicious!
