Hot Dog Chili 2

Dolly's Chili #2
This is a simple recipe with few ingredients that also freezes well.





Ingredients
Printable Recipe

1 lb. lean ground chuck
1 medium yellow onion finely chopped
1 clove garlic minced
2 Tbs. olive oil
2 Tbs. celery very finely chopped
Dash of Worcestershire Sauce
1/2 cup water
1 - 2  tsp. Chili Powder
1/2 tsp. Cumin
1/2 tsp. dry mustard (opt)
3/4 tsp. salt
1 Tbs. tomato paste
1/4 cup ketchup
1/4 tsp. lemon juice fresh
Black or Red Pepper to taste

* Optional* You can add 1 pint home canned tomatoes
If you wish.  Just cook down.

Instructions

Add olive oil in pan and brown ground chuck chopping finely as you cook.  Drain excess grease off.
Add onion, garlic, chili powder, cumin and water. Heat through until onions are clear.
Add The rest of the ingredients stirring and heating through.  Taste and add any extra seasonings you wish.
Cover and simmer on low 30 minutes to a couple of hours.  Checking, stirring and adding water if needed.

You can make larger batches so that you can freeze some for later use.
If you want to make the 3 LB. Recipe
Add 1 quart tomatoes
1 1/2 cups water and adjust your seasonings...
