Dolly's Short Ribs


Short Ribs with gravy served on a Bed of Homemade Mashed Potatoes


I really like short ribs!  My mama, such a wonderful cook could make The best gravies in the world..and biscuits....and cakes...and pies...ok yes she really was one great cook!  She did however help me to learn to like short ribs.  I always wondered, when younger why would one want to cook that bony little piece of meat?  Why?  I soon found the answer, "Because it tastes delicious!".  Today I share my own creation and yes it is simple with only a few good ingredients.  Then again that's all any good recipe takes Simple, Good Ingredients!....

Ingredients
Beef Short Ribs 8-10 *buy the best from reputable butcher*
Salt
Pepper
Flour to coat meat
Olive Oil
Bacon 2 slices chopped small and fried crisp
Garlic 2 cloves minced
Onion 1 very small chopped finely or 1/3 to 1/2 cup
Tone Beef Base 2 teaspoons *
2 cups water *

Substitution:
*Instead of Beef Base and water you could substitute Beef Broth/Stock *

Preheat oven to 350 degrees


The gravy thickens as it cooks

Instructions
Using oven proof pan/pot with lid, fry bacon until crisp remove from grease.
heat water in microwave 1 minute, add beef base stirring then heat 1 minute more.
Wash ribs, sprinkle salt and pepper to all sides, coat in flour, brown in bacon grease and add enough olive oil to coat the pan well.  Brown all sides of ribs adding garlic to pan while browning.  When they have browned add the chopped onions, bacon and about 3 Tbs. of the flour used in coating, and almost (key word) cover with the beef broth, reserving if any is left for use later. Heat to bubbly and thickened a little, adding& stirring in more broth if needed later.  Cover and place in 350 degree oven.
Bake for 2 1/2 to 3 hours or until fork tender.   I like to remove cover for 15-20 minutes at the end of baking time to brown the beef some.  It will melt in your mouth with such wonderful flavor.
Remove from oven and let rest for 5-10 minutes.
Serve with your favorite sides

I usually have homemade mashed potatoes and fresh green beans.  It is such a delicious recipe.  
Mama used to add short ribs with her stew beef when making and it always made it so much more flavorful.  The tender pieces of meat next to that bone can't be beat.  I like to call this a cowboy's kind of meal.  You know meat with the bone in it!
