Ingredients:
2 pounds potatoes(I used 3 very large restaurant baking potatoes)
1 cup sour cream
1/2 cup heavy whipping cream
1 small onion
1/2 stick butter
1 pound sharp cheddar cheese
Salt & pepper to taste
3 heaping tablespoons self rising flour
1/2 cup bread crumbs or Panko Crumbs ( I used lemon pepper) or crushed corn flakes
2 chicken bouillon cubes or water to cover potatoes while cooking
Reserve 12 ounces liquid/broth from potatoes.
Optional: Bread crumbs or Panko Crumbs lemon pepper or crushed corn flakes with a little melted butter
Instructions:
Peel, wash and cut potatoes into 1/2 inch cubes. Put into saucepan and cover with water with 2 bouillon cubes or use chicken broth.Boil then turn down to medium/medium high. Cook just until tender. * Do not overcook, you don't want mushy potatoes.
Ladle 12 oz. of broth from potato pot. Place into small sauce pot. This will be used in making your homemade cream of chicken sauce.
Drain the rest of the liquid from potatoes leave in pot if it is at least 4 quart size. If not place in very large bowl.
Make your homemade cream of chicken sauce:
In the small saucepan with the 12 oz of broth in it. You will want to add 3 tablespoons self rising flour to a small cup or bowl. Add just enough cold water to mix into a smooth paste. Add this into the broth. Stirring constantly over medium heat to prevent sticking and until thickened.
In a small mixing bowl add 1/2 cup heavy whipping cream. Beat until soft peaks form.
Preheat oven to 350 degrees
To potatoes add the following:
. 1/4 cup (1/2 stick butter) melted
. 1 cup sour cream
. Finely chopped onion
. Half of the grated sharp cheddar cheese
. Your homemade cream of chicken sauce
. Fold in your whipped cream
Taste
. Add salt and cracked pepper to taste
Place in baking dish
Top with the rest of grated cheddar cheese
Optional: Top with bread crumbs, Panko Crumbs or crushed corn flakes
Bake 45 minutes to 1 hour
Serve while warm
*Note* I love potatoes! Not just love, but LOVE potatoes! Always have. I can remember coming home from school and frying french fries for all of my little brothers and sisters. Yep potatoes and they loved it! Hope you enjoy this recipe! It is Not Fat Free as you can tell but you can make it less fattening if you substitute ingredients. It is your choice.
