I love fried fish on the bone. My mama and daddy could fry the best I've ever had. One more person that I used to call Fish Man would come to the strawberry field and fry fish. They were delicious!
My brother-in-law told me one time that he'd never seen a fish fried on the bone before until he ate at my house and my parents put one on his plate. He stared at it in amazement, not knowing what to do. They had only had filets in his family. Thirty years later he was still talking about that fish carcass on his plate. He is so cute about that.
I remember daddy taking us fishing and cooking the fish right by the lake. We'd have a loaf of bread, pork & beans and a soft drink. Fun times.
We have a wonderful fish market in our tiny town. Truluck's is the name. It is also a restaurant too with delicious food. Anyway they will clean and cut these fish so well that all I do is wash them thoroughly and fry.

Preheat oil in frying pan of your choice.
Ingredients
Fish
Salt
Pepper
Plain Yellow Corn Meal
Vegetable or Peanut Oil

Preheat oil to 350 degrees
You can fry in frying pan or deep fryer. My mom and dad always used an iron frying pan.

Simply salt and pepper the fish on all surfaces
Coat in plain yellow corn meal
Shake off excess corn meal
Fry until golden brown turning to brown the other side.
Eat while warm!
Tips: Remove crumbs from pan so as not to burn your grease so easily. Save if the oil is clean enough for use in frying fish at a later time. If oil is very dirty or burnt of course discard.
