Dolly's Tomato Cucumber Onion Salad



I absolutely love this kind of salad you will to if you love the ingredients that are in it.  If you like more of one certain ingredient then use more of it.  Use only the best ingredients you can find because if you don't it will be a bland nothing.   I assure you if you do it will become a favorite of yours too!  

It is now October in South Carolina and we are finding some of the best farm grown vegetables in our area.  Just today Chuck and Carey went to Summerton to Flower's Farm and brought back some of the most beautiful fresh produce. I have crisp farm grown green beans and fresh tomatoes I will be canning.  This on top of the flooding we have had and they suffered much of it their farm was covered and yet they can still produce such produce. They brought back squash, collards, turnips, cucumbers, peppers, I could go on and on but must stop. 

Here is a simple recipe that has been around for many many years.  It is such a tradition in the South that I just figured everyone had heard of it but maybe not.. .....recipe now...

 


Salad Ingredients

3 Cucumbers (homegrown organic or seedless if possible for best taste)
3 Tomatoes (homegrown organic if possible for best taste)
1/4 - 1/2 Large Red Onion
1/4 - 1/2 Large White Onion
Coarse salt and black pepper to season cucumbers to taste



Dressing Ingredients

3 Tbs Fratelli Carli White Dressing (the best or white wine vinegar)
3 Tbs Olio Carli Extra Virgin Olive Oil
1 tsp. sugar
1/4 tsp. black pepper
1/2 tsp. lemon juice (freshly squeezed)
Large sprig of fresh Dill chopped or 1/2 tsp. dried dill (I just love dill)

Place in large bowl and whisk as you add the ingredients


Instructions

Slice cucumbers, tomatoes and onions 1/8-1/4" thick
Take cucumbers place in another bowl salt with coarse salt and add black pepper stir to coat all
Place cucumbers into bowl with dressing
Add sliced onions into bowl with dressing
Toss using wooden spoon or both of your clean hand to coat all.
If you like it crispier you can eat it right away.  If you want the flavors to blend then cover tightly and chill for a few hours.
Serves 8
