Those of you that follow know that this recipe has been over at the main house website. I thought I'd put it here in the kitchen of Hibiscus House to make it more convenient to print and use.
Recipe
Preheat oven to 350 degrees
Grease and Flour Tube Pan
Ingredients
1 1/2 cups Canola Oil
2 cups sugar
4 eggs
2 1/2 cups self-rising flour
1/2 cup all-purpose flour
1 tsp. baking soda
1 tsp. salt
2 cups applesauce or 3 cups raw apples peeled and cut fine
1 Tbs. black walnut flavoring
1 cup raisins
1 cup chopped pecans or walnuts
Instructions
Mix oil, sugar, eggs, flours, baking soda, salt, applesauce and black walnut flavoring.
Toss raisins and nuts in a little flour to coat them well, then gently fold into batter.
Bake 1 to 1/2 hours or until a toothpick inserted into the center of the cake comes out clean.
This cake can be baked 2 weeks ahead of serving if you wish. It is one of those that with the fruit becomes more moist with time.
Wrap in wax paper then aluminum foil.
This cake can also be frozen for a short amount of time.
