Chicken Salad


This recipe is going to sound like my grandmama wrote it.  I now see why she said a pinch of this and a handful of that. I'll try to narrow it down though. I can tell you this we in the South love Dukes & Miracle Whip...


 


Ingredients

  • 4 boneless skinless chicken breast
  • Quarter of large red apple
  • Half of large bell pepper
  • 1 small onion (optional for boiling with chicken and 1 for salad)
  • Bread & Butter Pickles 
  • 2 ribs celery (1 for boiling and 1 rib for salad)
  • Dukes Mayonnaise
  • Miracle Whip Salad Dressing
  • Dill Weed
  • Salt & Pepper
  • 2 boiled eggs


Instructions:

  1. Boil your chicken with a little onion, celery, peppercorns & lemon juice...until tender cool, 
  2. Chill in refrigerator would be even better.
  3. After chilling chop, quarter of apple, bell pepper, celery, pickles and chicken finely
  4. Boil your eggs chop finely
  5. Chop the onion very finely
  6. Put chicken and other ingredients into a large bowl
  7. Add rest of chopped ingredients
  8. Add 1 to 2 spoons from your silverware drawer...(not the teaspoons the larger soup-tablespoons)
  9. of Mayonnaise and Salad Dressing....using a little at the time mixing with fork....you do not want your chicken salad to be floating in dressings....you want the chicken to be the main event.
  10. Add salt & pepper to taste
  11. Sprinkle with Dill Weed..(optional) I just love it.
  12. Chill

You can also use a rotisserie chicken for a quick and easy salad.  Increase your ingredients.  Use an entire apple chopped, 3-4 boiled eggs chopped, Same amount of onion but increase other ingredients as needed.  Taste as you go and you'll know what you need to add.

Wait for the compliments! This is my recipe and I have made it for countless years for bridal luncheons, lots of gatherings.
