Looking for something quick, easy and satisfying? This old Salmon Patty Recipe is a simple and tasty item to fit the "I want fish quick" mood. A family recipe that is delicious.
Ingredients
1 can salmon
1 beaten egg
1/4 cup finely chopped onion
12 to 14 saltine crackers
Dill Weed--McCormicks dash or two
lemon pepper dash or two
1 tsp canola or olive oil
Salmon open can pour into mixing bowl, take fork and remove the black skin and the little bones inside. The bones will not hurt but I don't like them. Do not drain salmon.
Crumble saltines finely & add to bowl
Add beaten egg
Add Chopped onion
Add seasonings
mix together with fork
Heat oil in frying pan over medium high heat
The salmon mixture needs to be worked with your hands a little. It will not hold together tightly, take a bit in palm of hand, shape and pat gently. Place in pan. This is the hard part do not touch until you see the edges beginning to brown. Then gently turn over and brown the other side.
I can not stress this enough be gentle or they will fall apart. Very little oil is needed especially if using a non stick pan for easier turning and pretty browning.
Makes 5 - 7 Patties
