I have cooked these rolls for almost thirty years and they are so quick and easy.
More importantly they are delicious!
It takes no more than two hours and your have something wonderful that you have made yourself.
Sometimes the extra effort is so worthwhile, especially when you see your family's smiling faces.
RECIPE
Ingredients
4 & 1/2 cups all-purpose flour, divided
3 tablespoons sugar
1/2 teaspoon baking soda
1 teaspoon salt
2 packages dry yeast
1 1/4 cups buttermilk
1/2 cup water
1/2 cup butter
melted butter for brushing tops
Combine 1 1/2 cups flour, sugar, baking soda, salt and yeast in a large mixing bowl; set aside.
Combine buttermilk, water, and 1/2 cup butter in a small saucepan; heat to 120 to 130 degrees.(no hotter, you don't want to kill your yeast)
Stir well, and add to flour mixture. Beat at medium speed of electric mixer for 4 minutes.
Gradually add remaining 3 cups of flour, mixing well.
Turn dough out on a floured surface, (or use dough paddle if your mixer has one to do this)
and knead until smooth and elastic about 5 to 8 minutes. Place in a greased bowl, turning to grease top. Cover and let rise in a warm place free from drafts, about 30 minutes or until doubled.
Punch dough down, and shape into 1 1/2 inch balls. Place on greased cookie sheets; cover and let rise in a warm place, free from drafts, 30 minutes or until doubled in bulk.
Bake at 400 degrees for 15 to 20 minutes. Brush with melted butter.
