Don't you just love this time of year? I love the flowers blooming, fresh vegetables growing wonderful, it is a fun busy time. We usually have a garden but this year we have had to sit it out and buy. Our garden has been invaded by nutsedge and we may have to relocate it.
There is a wonderful gardener down the road. He always has a little shed where he sells fresh veggies and fruits and has been known to plow my garden spot for me. I just adore him, he is so sweet. Yesterday we stopped by and got several tomatoes, almost a half bushel basket of fresh green beans, cucumbers oh my. I am glad he is so nearby. Chuck's Step-Father and Someone from work gave him some fresh squash.
I have put my order in with the farmer for fresh tomatoes a lot of them to can. He is growing the Marion and I love those and The Celebrity. I also love the heirloom varieties. I will not go another year without fresh canned tomatoes. We have a few heirloom ones to set out here at home and need some Roma too. I hate to be so mean but those tomatoes in the can are just awful....so bitter...
SO my day's plans were drastically changed with the purchase of green beans. Sewing and cleaning on hold for the moment there is work to do.

First canning on my Electrolux Range. I was scared it would break from the
heat and weight, thankfully it did not.
Important guidelines
- Use a Pressure Canner: You must pressure can low acid foods such as these green beans for safety
- Follow the manufacturer's instructions for your specific pressure canner.
- Process the jars for the recommended time and pressure for your altitudes
- Generally, for pint jars, the processing time is 20 minutes at 10 lbs pressure for altitudes 0-1000 ft. *You know your own times will vary* according to the National Center for Homwe Food Preservation.
