Tuna Macaroni Casserole




Spring and Summer are very busy seasons for a lot of us. I love this time of year but can't do all that is in my mind to do..it is just not possible.  Although I cook more than the average person.  In the South we, well some of us tend to fix very hearty meals.  I suppose I get this from my ancestors, a lot of them were farmers.  They worked hard all day and were very hungry when they came in to eat. 

 We were not farmers but I came from a family of 5 children and mama worked when I became a young teenager.  I still don't know how to cook for a smaller family.  Husband enjoys this because he can take home cooking to work for his lunch.  That makes him happy and when he is happy so am I. 

This is a recipe that my mother in law, Genolia and I found on the back of a macaroni box years ago, well that recipe says to stir it in the pot and heat through. We of course had to add real cheese, bread crumbs, butter and then bake.  It is pretty tasty for a tuna casserole.

Ingredients

Preheat oven to 350 degrees

1- 7.25 oz. box of macaroni & cheese dinner 
add
1-can condensed cream of mushroom soup
1/2 cup milk
1 - 2 cups shredded cheddar cheese
1- 5oz can chunk light tuna in water- drained
bread crumbs
melted butter

Instructions

Cook Macaroni & Cheese Dinner and mix according to directions
Mix soup, milk, half of cheese and can of tuna
Place in greased casserole baking dish
Top with cheese 
Optional:  Add crumbled bread crumbs drizzle with melted butter

Bake 30 minutes or until lightly browned

Serve warm it is delicious
Serve with sweet peas or you may add them to the casserole your choice (optional)

**note** we love cheese and daughter loves tuna so we add more cheese and 2 cans of tuna if you do this you may need to add a touch more milk to prevent it from becoming too dry.**
