Peach Banana Cherry Jam....Yum!




 
This jam is so delicious! I have to warn you though it is like eating candy, more like a marmalade, so if you are watching your sugar or are diabetic, you may want to refrain from it.


Blushing Peach Banana Jam

Ingredients

3 /4 cups peaches, ripe peeled and mashed (roughly 2 pounds)
1 cup bananas, ripe and mashed (about 3 medium sized)
1/2 cup maraschino cherries, drained and diced
2 tablespoons lemon juice
6 cups sugar
1 package Sure Jell

Directions:

1.  Mix peaches, bananas, cherries, and lemon juice into a large saucepan.

2.  Mix pectin into fruit in pan.

3. Stir and cook over high heat until mixture comes to a full rolling boil (one that can't be stirred down).

4.  Add and stir in sugar.

5.  Bring to a full rolling boil once again.

6.  Stir constantly and boil.  Boil rapidly for one minute.

7. Remove from heat.

8.  Skim off foam.

9.  Stir and skim for about 5 minutes allowing mixture to cool slightly and prevent floating fruit.

10.  Ladle into sterilized canning jars, leaving 1/4 inch head space.

11.  Make sure jar rims are clean and cove with two piece warm metal lids and rings.

12.  Put into a hot water bath making sure water covers jars 1 to 2 inches with water. Boil for 5 minutes.

Remove from water bath and place in spot free from drafts on covered surface.  Leave undisturbed for 24 hours then you may check for seal wash and store jam in a cool, dry, space.
