Million Dollar Pie or Cool Whip Pie

The year was 1972 and at a bridal shower when we had a recipe exchange.  My soon to be mother in law Jackie gave me this recipe and I have to tell you I sure did love it.  My school friends and I spent a great deal of time over at her house as it was.  She was young, beautiful, a hairdresser and excellent cook to just name a few of her qualities and talents!

Jackie is the lady in pink who looks as if she could be my age...

You have most likely in the past few oh thirty some years had some of this pie but if not give it a try.
It is a very easy to mix together pie that is really very delicious in the Summertime but hey I wanted some now so here is the recipe for

Million Dollar Pie
(or as some in the 70's called it )
 Cool Whip Pie:

1 15oz. can crushed pineapple drained
1 can sweetened condensed milk
1/3 cup lemon juice
1 cup flaked coconut
1/3 cup chopped pecans
1  8ounce container of Cool Whip
 Mix all of the above
 &

 2 graham cracker pie crusts

then divide among the pie shells

cover with the clear lid (you know the one that is inverted on the purchased pie crusts) turned upside down close pie with lid and then chill for at least one hour or even better overnight.

Another variation
for this type of pie from Jackie is:
1 can sweetened condensed milk
1 8 oz. Cool Whip
1 cup of chopped nuts
1 tsp. lemon juice
1 2oz. can crushed pineapple drained
mix the above ingredients and
pour into
1 or 2 your choice of baked pie shells
top with flaked coconut
chill until set

Enjoy!
