My Version of Alice Springs Chicken
Preheat oven to 425 degrees
Organic chicken breasts 1 per serving (butterfly as shown in video below)
Catie's Honey Mustard Sauce (recipe link shown below)
Bacon 1 slice (cut into 2 pieces) per chicken breast
Mushrooms sliced fresh ( # 4 instruction) below or canned (drained)
Monterey Jack and Cheddar Cheese
Little salt, paprika and cracked black pepper
Optional Fresh Chopped parsley
1. Butterfly the chicken breast sections to make it thinner
To do this
Take the breast sections wash, pat dry, cut down center of a breast until about 1/4 to 1/2 inch from bottom. Take the knife and carefully cut towards the outer edge of breast being careful not to cut into completely..essentially butterfly outwards to cut thinly, Do this to the right and to the left. You will be left with a flatter~thinner chicken breast section that you can slice in half if you wish.
2. Season your chicken breasts with salt, black pepper and paprika
marinade with some of your honey mustard recipe link below. You can just leave this on your counter for a short time while you prepare your other vegetables.
3. Fry your bacon, I cut my bacon down the middle for shorter pieces
You will want 2 of these little pieces for each chicken breast you are preparing
4. You will want to slice fresh mushrooms and gently cook in a little butter in a frying pan.
5. Heat a large frying pan with very little olive oil
Add your chicken, cook a short while aprox. 2 minutes on medium high heat
Turn and then cook an additional 2 minutes
6. If your frying pan is ovenproof great, if not place chicken in ovenproof baking dish;
layer chicken breast as follows:
- Breast
- Place 2 pcs bacon criss cross on top of chicken
- Place some of the mushrooms on top of that
- Place sliced or shredded Monterey Jack Cheese
- Place sliced or shredded Cheddar Cheese on top of that
- Chopped Parsley on top of that (optional)
Place in preheated oven
heat to melt cheese until bubbly 7 to 10 minutes
Serve while warm with sauce and vegetables of your choice.

I served mine today with baked asparagus seasoned with a little salt, pepper and olive oil and it was delicious!
