Banana Cake






Banana Cake Recipe

Preheat oven to 350 degrees F
Grease and flour a 1 pound loaf pan

1 stick butter
1 cup sugar
2 eggs
1 1/2 cups sifted cake flour
1/4 teaspoon salt
3/4 teaspoon baking powder
1 teaspoon pure vanilla extract
1 teaspoon pure lemon extract
1/3 cup Carnation Evaporated milk
2 medium bananas mashed

Variation 
 You may only use 1 medium mashed banana and replace the other banana with 1/4 cup jam of your choice.  I used my Peach/Banana/Cherry Jam and I can tell you it is delicious.  Not too sweet, little color bits very good cake.  You could always add nuts too if you wish.
I mix all of my cakes basically the same.


  

     Whip butter, add sugar mix for a couple of minutes. Add eggs one at a time beating after each egg. (Don't over beat because it always causes a cake to be heavy and a little tough). 
     Sift your cake flour/measure.  Sift again with salt and baking powder.  Set aside. 
     Add half of the flour mix well.  Add half of the Carnation Milk mix well.  Add remaining flour and milk.
     Add mashed bananas or banana jam mixture.  Only mix for a short time on low.
     Add Extracts/flavorings

Bake in one pound bread baking pan 50 - 60 minutes or until tester or wooden toothpick inserted in the center comes out clean.
     
This cake is moist and delicious as it is.  You could make a glaze or cream cheese frosting to top it off for a very rich desert.
