Okra is really coming in here in South Carolina. My daughter and husband love it cooked on top of their butter beans. I let them eat it out of the pot and I just scoop up some of the beans. I love mine fried! Okra is especially good when added to fresh stewed tomatoes and soups.

You don't have to batter your okra is you'd rather not. You can as my grandma used to do add a little oil..(just enough to cover bottom of pan). She used fat back or bacon grease and cooked it in an iron frying pan of course, but you can use olive or canola if you wish..cut okra up heat oil place in pan salt and pepper. Don't stir or turn often but of course turn some to prevent burning. You don't want it to fall apart. It is very delicious that way too!
This is how I like to cook mine:
Mix together
1 cup self rising flour
1/2 cup plain yellow cornmeal
1 1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon cayenne pepper (optional)
1/2 teaspoon garlic powder
Plus
Buttermilk, milk, or a little water to make the coating stick
Deep Fryer or Deep large pot filled no more than 1/2 full of canola or vegetable oil
Preheat to 375
Cook 5 minutes or until golden brown
Remove from oil and drain on paper towels. Tent with foil or place in slightly warm oven to keep warm.
Serve fairly soon because fried okra cools very quickly.
