This is one of my original recipes
Ingredients:
1 Lb. Fresh Flounder approximately 8 Filets
1 qt. vegetable oil
1 gallon storage bag for shaking or large bowl for coating flounder
Flounder Coating Mix
Mix the following together
1-10oz. Box Cracker Meal
1 cup all-purpose flour
1 Tbs. salt
1/4 tsp. garlic powder
1/4 tsp. onion powder
1/2 tsp. paprika
1/8 tsp. dill weed
1/2 tsp. cracked fresh pepper or lemon pepper
Instructions:
Preheat oil to 360 degrees in dutch oven pot or frying pan
Wash flounder thoroughly, leave wet
Put a small amount of coating mix into the storage bag
Place a few filets into the bag, close and shake covering each piece.
Shake off excess coating,
Place coated flounder on a plate to be ready for frying.
Fry 2-3 minutes or until lightly browned, turn and brown the other side, watching closely.
It won't take long to cook the fish.
Remove from oil and place on platter layered with paper towels.
Do not let filets touch.
Serve Warm!

*Tip: Use only the amount of coating that you need. The clean leftover coating mix can be frozen for later use.

You may be thinking out there that I fry everything by now. While I do fry things just not as often as I used too, I also broil and cook without batters. They are just not that interesting to post as recipes because they are too easy....Hey may have to for the quick and easy section of this blog...
