Don't you just love peanut brittle? I sure do and can't find my old recipe. I spent a short while searching and came upon this one I'll share with you today.
This is a recipe I found online at The National Peanut Board. The great thing about it is that it is made in the microwave! Yes, I was feeling lazy and decided what better time to try a peanut brittle in the microwave.
I'll have to find my old fashioned recipe to post at a later date. It's been awhile since I've made peanut brittle and I miss it. When I was a small child my Grandma Cora would not treat herself to much but I remember shopping in our little town with her and she would buy some peanut brittle.
That was a special treat for her and I loved seeing her do a little something for herself. She was a very precious lady.
The hardest thing about this recipe was taking the raw peanuts out of the shell. That is how easy it is to do.
Ingredients
1 1/2 cups raw Spanish peanuts shelled, skins on
1 cup granulated sugar
1/2 cup light corn syrup
1/8 tsp. salt
1 tsp. butter
1 tsp vanilla extract
1 tsp baking soda
Preparation
Stir together peanuts, sugar, syrup and salt in a 2 qt. microwave container. Microwave on high 8 minutes, stirring well after 4 minutes. Stir in butter and vanilla.
Microwave on high 2 minutes longer. Add baking soda and quickly stir until light and foamy, (for safety's sake keep in mind that the mixture will dramatically increase in volume and could spill over the sides of the container.) Immediately pour onto lightly greased baking sheet; spread to 1/4 inch thickness. When cool break into pieces and place in an airtight container.

*My personal notes: I like the recipe. It is great for a quick brittle that is very tasty. It is lighter in the butter and has a lighter taste. It is still good. I will find my recipe and share and maybe along the way share others I find.
I would have some vegetable spray to coat the measuring cup for the syrup, the spoon or spatula that you will be using to stir and the baking sheet that you will be spreading your brittle out on.
This would be a less time consuming project for making Christmas gifts.
