Would You Like A Blueberry Pie?




It's that time of year again! Blueberry picking time!
Chuck loves blueberries. I have to admit that I like them too. I feel that a blueberry, just like the strawberry is at it's best when you are in the field picking and eating.  We are blessed to have some in the family and they are just delicious.
  I hope you enjoy this easy to make pie.


EASY BLUEBERRY PIE

Preheat Oven to 425

Ingredients:

1 cup sugar
1/4 cup all-purpose flour
1/4 teaspoon ground nutmeg
1/8 teaspoon salt
4 cups fresh blueberries
1 tablespoon lemon juice
2 crust pastry * or 1 (15-ounce) package refrigerated pie crusts  *or 2 frozen pie crusts thawed for use
1 large egg slightly beaten
Sugar

1.  Combine first 4 ingredients in a large bowl, stirring well.  Add blueberries, and toss gently:  set aside for about 30 minutes. Stir gently every 10 minutes or so to help dissolve the sugar.
2.  Prepare pie crusts or your choice.  Fit 1 pie crust into a 9-inch pie plate.  Prick and bake for 8 minutes.  Take from oven and cool.
3. Spoon berry mixture into crust; sprinkle with lemon juice, and dot with butter.
4. Place top crust onto pie, slit X in middle and make 4 to 5 slices around pie for steam to escape.
Beat the egg and brush on top of the pie (makes for a prettier color and better tasting crust.)
Sprinkle a little sugar across top of pie
5.  Bake at 425 degrees for 10 minutes: reduce oven temperature to 375 degrees and bake 30 more minutes.

Cool for 15 to 20 minutes to make for better slicing.

I know not the prettiest pie in the world but it tasted so good.
