Homemade Pimento Cheese

You know something?  I just now today found out that Pimento Cheese is not widely known about nor eaten around the world. It is a Southern thing. It is referred to as "The Caviar to the South".  Did you know that?  Bless my soul I thought everybody grew up eating pimento cheese sandwiches.
Most of these sandwiches are made between two slices of white bread.  It has been a standard, taken for granted , go to for a sandwich spread here.  When serving company (guests) you must cut the crust off...

That is not to say that we don't use these for special occasions too. You can't go to a party, bridal or baby shower, or a wedding for that matter; hold on a minute all of our parties have some sort of pimento cheese sandwich. 
For these special occasions you would use festive cookie cutters to cute out fancy little sandwiches, at the very least you would cut the crusts off and make them very small squares or triangles.
I almost forgot you can also spread some on a piece of celery and it is delicious!
Then of course you would have some type of cracker with pimento cheese spread on then maybe a spanish olive sliced and put on top.
These remind me of my Aunt Willie Lee.
I went to my first grown up teen party as a tag along with my cousin Linda her daughter.  We danced, ate, looked at the boys..a night not forgotten...

I am still floored that there are others outside of the southern regions of this country that don't know what pimento cheese is, that is how engrained it is in we southerners.

The Pimento Pepper itself is a large red chili pepper, sweet and more aromatic than the red bell pepper.  You can find this pepper stuffed in Spanish Green Olives


Dolly's Pimento Cheese Recipe

 Printable Recipe
2 cups grated and chopped sharp cheddar cheese
1/2 of a 4oz jar of pimentos (Dromedary)
Up to 1/2 cup mayonnaise (Dukes) Spoon in a teaspoon at a time to get the consistency you like.
1 tsp. Miracle Whip Salad Dressing
Pinch of salt & Pepper

Simple as that mix together until smooth with a mixer.


Optional ingredients
You may also add if you wish to the above ingredients.
3 oz. cream cheese
1/4 tsp garlic powder
1/4 tsp onion powder
A few drops of Texas Pete Hot Sauce
Some cracked black pepper 
I use Fresh Dill and Chives too
**You could also use 1 cup sharp cheddar and 1 cup Monterey Jack instead of just cheddar**

Make an occasion of it.  Place a beautiful crisp ironed tablecloth on, pull out your good china and some condiments.  Make a special beverage, use your crystal put flowers on the table and have your own party!
