Homemade Old Fashioned Chocolate Icing


Sharing this pic even though it is not my prettiest work. I'm laughing at it but it is so delicious!  (The icing if done properly would have a smooth shine to it. Touch ups are a no no for this recipe.)

     The taste more than makes up for the looks I have to say.  If you love the old fashioned goodness of a true fudge tasting chocolate icing then this is the one for you.  
     I first cooked this recipe in 1972 and it is one of my all time favorites!
Give it a try and it will be one of yours also.
  Maybe you remember the church socials or bake sales where there would be a multilayered yellow layer chocolate Iced cake and everybody would be rushing to buy it?  This is most probably the icing that was used on that huge smooth shiny chocolate cake everybody wanted a piece of.
     

Old Fashioned Chocolate Icing

Ingredients 

This recipe makes enough to ice a 2 -- 9" layer cake


1 stick butter
1/2 cup cocoa
1/2 cup milk
2 cups sugar
1/4 teaspoon salt
1 teaspoon vanilla extract
 

Instructions

   Put all ingredients into a medium saucepan on medium heat.  Stir well and continue to stir frequently.  When this mixture heats up stir constantly.  Boil (soft boil)  only 1 minute any longer and you will have fudge.
     Remove from stove and pour into bowl of stand mixer. (believe me you will want a stand mixer if possible because you will be beating a fairly long time)
     Beat until it is of spreading consistency.
