Ingredients
- 1/2 cup Crisco Shortening
- 2 sticks butter
- 3 cups sugar
- 5 eggs
- 3 cups plain all-purpose flour
- 1/4 teaspoon baking powder
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
- 1 cup Carnation Evaporated Milk
Instructions
Have butter, eggs and canned milk at room temperature.Preheat Oven to 325 degrees F
Mix and sift flour with baking powder and salt set aside until use.
Prepare your tube or bundt pan.
How to Prepare Pan:
Taking a paper towel grease the inside and tube around with shortening. Take a little flour in bottom of pan 1/3 cup or so. Over trash can shake and distribute flour all around bottom and sides of pan. Adding flour as needed drop loosely down the sides of the tube covering with flour. Turn pan upside down over trash can popping getting all of the loose flour out of pan.
In stand mixer mix shortening and butter until smooth and creamy.
Add sugar mix thoroughly for a minute or two until smooth and creamy. (not gritty)
Add eggs one at a time, mixing thoroughly until well mixed.
Add 1/3 of flour, mix thoroughly
Add 1/3 of Carnation Milk, mix thoroughly
Do this two more times, mixing thoroughly after each addition.
Add vanilla flavoring, mix just until mixed.
Take a large spoon and spoon batter into and around in the pan distributing evenly.
Take the pan and drop it on counter to get air bubbles out OR Take a knife, cake tester, or skewer and gently stir around in pan not touching bottom to get the air bubbles out.
Place in oven and bake 1 hour and 15 minutes or until tester inserted comes out clean.
Check after an hour or simply look at the cake. You can tell without opening the oven if it appears to be done.
*Pointer* Do not open the oven a lot to check. Leave it closed for at least the hour. Do not bounce around the kitchen. I can't tell you how many times my mother and grandmothers have told me this. Your cake will fall in the middle. My sister always hoped for a fallen cake. She loved the way a fallen cake tasted. Unless you are like her Do Not open the oven repeatedly.
