Meatloaf with Dry Onion Soup Mix

In a hurry?  Need something quick, warm and delicious? That was my situation.  I wanted to sew and needed something quick.
I plan my grocery shopping trips.  We live out in the country and it takes about 30 minutes to travel where I like to shop.  My mama loved to grocery shop and that is one of my weaknesses for sure.  I love to shop and stock.  I overdo.  Oh not that I won't use what I buy because it will be used.  It's just that I over shop in this one area.
On this day I am believe it or not out of onions! Heck we want meatloaf.  I saw the Lipton Dry Onion Soup Mix there in the pantry.  Alright Dolly, bite the bullet break down and  use a packet to fix a meatloaf.
In the event I ever run out of onions again I will put this on site to use.  They may take the recipe off the back of the box.  You never know.

Lipton Souperior Meat Loaf

Ingredients:

1 package Lipton Dry Onion Soup Mix

2 lbs. good ground beef ( I used good Angus Beef from good butcher meat shop)

3/4 cup dry bread crumbs (I used instead a little flour (1/4 cup) stirred into the ground beef and let it sit for 3 minutes)

2 eggs (I used a double yolker)

3/4 cup water

1/3 cup ketchup

Instructions:

Preheat oven to 350 degrees

Combine all ingredients in a large bowl

Shape loaf in a 13" x 9" or loaf pan

Bake uncovered for 1 hour or until done

(thermometer should register 160 degrees)

Let stand 10 minutes

Cut and serve.

8 Servings

My review:

I liked it and it was good in a pinch.  Asked the family if they liked it and they said it was alright, good.  I asked if they liked it better than mine and they said no.  We did eat it though so my one word review: Good.

Enjoy,
