I seem to have a problem with remembering Christmas comes every year at the same time. Every year I think next year I'll be prepared...(yeah right)...For those times when you are so very busy shopping and preparing for the holiday you need something good to eat yet delicious...This tenderloin fits the bill.
What you will need:
- 2 pound pork tenderloin
- thyme
- rosemary
- ginger
- garlic
- salt and pepper
- bacon
- large onion
- fingerling potatoes
- fresh whole greenbeans
- twine
I used thick bacon what we in the south call slab bacon...
Look at this little ball of twine on a little twig.
I have this it was one that my grandmother placed on the twig..and worth a million dollars to me now!
- Place pork tenderloin out on counter to come to room temperature.
- Season all sides of tenderloin with herbs rubbing as you go..rosemary (fresh or dried), ,thyme (fresh or dried), garlic (fresh minced or garlic powder), ginger (fresh minced or dried) salt and pepper.
- Wrap the tenderloin with bacon wrapping horizontally around.
- Take your twine and sliding under bacon covered loin wrap and tie in sections to secure. This will take some maneuvering but you can do it.
- Place olive/vegetable oil to coat a large frying pan or griddle. Turn heat up to medium high and brown bacon covered tenderloin on both sides.
- Put meat thermometer into center thickest part of tenderloin being careful not to touch bottom try to center the thermometer into the meat.
- Place in baking dish/pan of your choice
- Put small fingerling potatoes and the onion chopped all around the loin
- Place in preheated oven at 400 degrees for 20 minutes
- Turn the oven down to 325 degrees and cook until thermometer reaches 140-145 degrees (it will continue to cook to the recommended temp of 145 when removed from oven)
- **note Once meat registers correct temperature if your potatoes aren't cooked tender remove tenderloin to counter and tent cover with aluminum foil...to stand and until potatoes are done..If need be turn oven back up to 400 degrees to finish cooking your potatoes.
- **Do Not Overcook
I had to remove mine to platter and finish cooking potatoes..
Lift carefully from baking pan and tent with aluminum foil to rest.
Look at the delicious juices that form on platter after standing/resting on the counter for a small amount of time.
Tip...I use aluminum foil sheets that I get from Sam's Wholesale..
place a sheet underneath a paper towel to keep foods warm longer
I also tented these potatoes with a sheet...
Look at this! So tender, smells wonderful and ready to eat!
You must be ready to eat immediately for best taste.
I timed and fixed the green beans in the microwave to be done at the same time
Plate and serve immediately
Delicious!
Isn't this a great idea for a quick, easy, delicious meal that can cook while you are so very busy? I think so, for this time of the year..Go, visit with relatives, wrap presents whatever you need to do your meal will be ready shortly and people will oooouuuu and awwww as if you spent the day in the kitchen...shhh don't tell them any different...
