In a hurry and don't have any fresh sweet potatoes but want some. Canned sweet potatoes are a quick way to go. Truthfully I don't use them often but my mama Dot did at times when the fresh ones weren't available. These are especially good with Chicken Bog. Today I share a quick candied recipe that I've made for years.....
Today I used a brand that is readily available here called Bruce's Yams (even though they are truly sweet potatoes not yams). I saw this can around Christmas time and bought it because it brought back memories of my mama.
As always if you have the fresh sweet potatoes they would be better. Cook, peel, chop and then follow recipe instructions.
Ingredients
- One 40 oz. can sweet potatoes drained reserving 1/2 cup
- 1/2 cup butter
- 1/2 cup light or dark brown sugar packed tightly
- Approximately 1/2 cup syrup that was drained from the can of sweet potatoes
- Dash cinnamon, nutmeg, vanilla extract and salt
- touch of lemon juice
Instructions
Melt butter in medium saucepan
Add brown sugar
Stirring or whisking often getting rid of lumps heat 2 - 3 minutes until bubbly hot
Add 1/2 drained syrup from canned sweet potatoes (be careful mixture will be somewhat candied and extremely hot)
Bring to soft boil stirring for about a minute
Add the dash of salt, cinnamon, nutmeg, vanilla extract and about 1/2 tsp. fresh lemon juice.
Add sweet potatoes mixing softly into candied syrup so as no to mash potatoes
Bring back to boil
Stir softly
Cover reduce heat to low
Heat potatoes through
Serve immediately
Cook Time approximately 10 minutes
Serves 4 - 6
