Moist little balls of fried fluffy cornbread hushpuppies. They go so well with so many things. We in the South have them with Fresh Fried Fish, Chicken Bog, Pulled Pork Bar B Que among other things.
It is said that this tasty treat was first made in the South of course and fed to the dogs who would be standing around wanting some of that fish that was frying...People would throw them one and say, "Hush Puppy!". Today I share two of my very easy recipe variations....

Old Fashioned
This version a little more cornmeal for that deep cornbread taste

**You can check for doneness by removing and cutting a hushpuppy into. The center should be done and moist.****Taste and if not enough onion flavor add a little onion powder**
- 1 cup stone ground yellow corn meal
- 1/2 cup self rising flour
- 1/2 teaspoon salt
- 1/2 teaspoon baking soda
- 1 beaten egg
- 2 tablespoons oil
- 1/2 cup yellow onion chopped finely or 1 small onion
- 1/2 cup of buttermilk
- vegetable oil for frying
Lighter/Fluffier Version

- 1 cup stone ground yellow corn meal
- ** 3/4 cup self rising flour
- 1/2 teaspoon salt
- 1/2 teaspoon baking soda
- 1 beaten egg
- 2 tablespoons oil
- 1/2 cup yellow onion chopped finely or 1 small onion
- ** 3/4 cup of buttermilk
- vegetable oil for frying
- Drop batter by scant half teaspoon fulls into hot oil turning constantly and reducing heat as needed to prevent burning. Electric Fryer will be more evenly heat controlled but doesn't work as well as just a pot on stove. I used a small saucepan today half full of oil to fry mine in little batches.
- Only drop a few hushpuppies into the pan they will quickly rise to the top. You will want to turn them rather a lot to prevent burning. It usually takes only 2 - 3 minutes or so to cook them done if the oil is hot.

- Substitutions:
- Plain All Purpose Flour Adjust ~ Double Baking Soda and Salt
- Sweet Onion ~ Add 2 Tablespoons Onion Powder for added onion taste
- Can't use flour** then use whole milk, 1 tablespoon baking soda, and 1 tablespoon baking powder...Add 2 eggs instead of one.
Another word of advice: You will have to be prepared to work quickly and watch constantly. Turning frequently and monitoring the heat of the oil. If you have someone that would like to help that would be good, not necessary but good. Someone to put into the hot oil and someone to turn them when they rise and start browning.
