I do like potatoes. Probably a little too much. Growing up mama cooked a lot of rice more than potatoes. The Johnsons liked rice. We had them though and come to think of it I loved them back then. I would come home from school when mama was working and cook french fries. I had to feed my hungry little brothers and sisters something. No bagged snacks for us in those days. Heck a sandwich and a can of soup, not to mention a tv dinner...those were treats for us. We always had home cooked meals complete with garden fresh vegetables, homemade bread and deserts daily. Sweet tea was our drink of choice along with the milk mama made us drink of course. The tea came a little later. It soon took over as our favorite drink of choice. We walked down to Wilkes Country Store when we grew older to buy a soft drink, candy bar etc....Oh well that was my trip down memory lane....now to give you the recipe....kinda in a pinch of this way.....
1. Oven Baked Potatoes
2. Filled with mixture
3. Topped with sharp cheddar cheese
4. Baked until cheese melts and has browned slightly
Ingredients
Large Baking Potatoes
Sharp Cheddar Cheese Grated
Sour Cream
Onion Chopped Finely
Mayonnaise
Salt
Black Pepper
Bake the number of potatoes needed. Remember a half will be a serving.
Bake at 400 degrees just until fork tender. Depending on size up to an hour or more.
Remove and cool slightly.
Take a spoon and scoop out most of the potato, being sure to leave a thin layer of potato in peeling. This will be needed for support to hold mixture.
Place the scooped potato in large bowl
Chop potato into chunks mashing slightly.
Add chopped onion to your liking.
Add salt and pepper to taste.
Add a little sour cream..(I added 1/4 cup for huge potatoes above.)
Add a little shredded cheese to mixture..reserving some for topping potatoes.
Add mayonnaise a little at a time. You will want your mixture to be chunky like a smashed potato NOT creamy mashed...(you can always add more if needed)
You may add anything you wish to this chopped chives, dill, etc. your choice.
I melted 2 tablespoons of butter to add to my mixture.
Top with shredded cheese.
Sprinkle a little Paprika for pretty browning.
Place in 400 degree oven that should still be on and warm.
Bake until cheese is bubbly and browned lightly.
Yes, this is one of those where you ask someone like my precious Grandma Cora, how do you make that? She would say, "Honey you add a pinch of this a little of this, or a lot of this....Kind of recipe.
