Doug with his Stuffed Chicken Breasts and Portobello Mushrooms
Ingredients:
Chicken Breasts
Cheeses of your choice grated
Fresh Asparagus Steamed
Sun Dried Tomatoes
Pepperoni
Portobello Mushrooms
- Preparing the chicken breast for the grill.
- Take a sharp knife and butterfly the chicken breast, making sure not to cut all the way through.
- Layer in this order:
- Lightly Steamed Asparagus, sliced Pepperoni, Grated Cheeses, Sun Dried Tomatoes. You may add a little butter if you wish on top of layers. He did not in this but may next time. It is best to add very flavorful cheese for best taste.
- Close chicken breast. Place in grill basket. Grill to correct temp using a instant read thermometer to make sure the chicken is cooked thoroughly that would be 165 degrees.
Wipe the Portobello Mushrooms, brush with olive oil, place in grill basket or directly on the grill. Cook only a few minutes turning once browned. Remove from grill and eat immediately.
