Homemade Chick Fil A Sandwiches


We really like Chick-fil-A in this family.  It is just plain good!  Today I share this copycat recipe for their sandwich which is not my personal recipe it is Todd Wilbur's and the link can be found below.  I own most of his cookbooks and have yet to make anything in them that doesn't come pretty close if not exactly to the taste of the originals.

Ingredients

3 cups peanut oil
1 egg
1 cup milk
1 cup flour
2 1/2 Tbs. powdered sugar
1/2 tsp. pepper
2 tsp. salt
2 skinless, boneless chicken breasts, halved
4 plain hamburger buns
2 Tbs. melted butter
8 dill pickle slices


Dolly's Tips!
Buy the best local chicken breast you can.  It will be the most tender and tasty.
Butterfly if thick and place covered on a covered surface.  Pound until flattened and as even as possible for best taste.



Instructions

1. Heat the peanut oil in a pressure cooker over medium heat to about 400 degrees
2. In a small bowl, beat the egg and stir in the milk.
3. In a separate bowl, combine the flour, sugar, pepper, and salt.
4. Dip each piece of chicken in milk until it is fully moistened.
5. Roll the moistened chicken in the flour mixture until completely coated.
6. Drop all four chicken pieces into the hot oil and close the pressure cooker.  When steam starts shooting through the pressure release set the timer for 3 1/2 minutes.
7. While the chicken is cooking spread a coating of melted butter on the face of each bun.
8. When the chicken is done drain or blot on paper towels.  Place two pickle slices on the bottom bun; add a chicken breast, then the top bun.


More Dolly's Tips:
1. Watch the oil when heating in your pressure cooker. I personally would not heat anymore than to 350 degrees.  It can get overly hot and quickly.
2. I wouldn't worry about buttering the buns until after chicken is done because you need to devote your entire time to watching that.
3. Monitor your pressure cooking when cooking turning stove down quickly because it is easy to burn in the cooker if not watched.
4.The pressure cooker valve may rise and seal even though the pressure regulator/weight will not be used.  Watch closely but don't worry you can remove cooker from heat 30 seconds before time ends and if this doesn't lower the valve then sit in sink and run cool water slower over the top of cooker.  It will release almost instantly.  Remove lid and take chicken from pot to drain on paper towels. 
5. Make your sandwich add the toppings you like and eat immediately for best melt in your mouth taste. 



Serving with my homemade Dill Pickles!  Delicious!
