Dirty Rice # 1






Ingredients

2 cups long grain white rice
4 cups chicken broth
1 cup green bell pepper chopped
1 cup onion chopped 
1/2 cup celery with tops/leaves chopped
2 cloves garlic chopped
1 Lb chicken livers chopped
1 Lb bulk sausage 
1/2 tsp. Salt or to taste
Pepper to taste

Instructions

Cook rice with the chicken broth and salt.  Bring to boil turn to simmer cover cook for 20 minutes. Remove from heat.
Using large frying pan brown sausage and chicken livers.  Remove from pan and then cook onion, green peppers, garlic and celery until soft.  Add meats back to pan.
Fold rice into the meat/vegetable mixture in pan.  If needed add salt and pepper to taste.
Serve while warm.
Serves 8-12

*You choose the heat you want in your sausage mild, medium or hot...
* You can of course cut recipe in half if you choose because it does make a large batch.
