Southern Pecan Pie


     I absolutely love pecan pie. Yes, it is rich, may not be the best for my waistline but I still love it!
It wasn't until a short while ago that I did realize something about my cooking. I use lots of pecans, well frankly all sorts of nuts. 
     My daughter is allergic to pecans so I have skipped making so many dishes with pecans because of it. This year though I really wanted pecan pie so I made one. I for some reason have lost my all time favorite recipe, but when I find it you will be the first to know. This pecan pie recipe is another that I have used so I will share it with you today and it is a very good recipe.

SOUTHERN PECAN PIE RECIPE

INGREDIENTS:

1 1/2 cups pecan pieces
Handful of whole pecan halves for garnish on top (if desired, it is optional)
3 large eggs
1 cup sugar
3/4 cup light or dark corn syrup
2 tablespoons melted butter
2 teaspoons vanilla flavoring
1/2 tsp. salt
1 deep dish frozen unbaked pie shell or you certainly can if you have time make your own pie crust

DIRECTIONS:
Preheat oven to 350 degrees

Spread pecans in single layer on a baking sheet
Bake at 350 degrees for 8 - 10 minutes or until toasted
Stir together eggs and sugar, corn syrup, melted butter, vanilla flavoring and salt.
Stir in pecan pieces
Pour into unbaked pie shell
Top with pecan halves if desired

Bake for 55 minutes shielding pie crust if need be with shield or foil to prevent burning.

Watch the last few minutes to make sure pie doesn't burn

Serve warm or cold.

I baked two of these one with the light corn syrup and one with the dark...I think for a change I liked the dark corn syrup pie..they both turned out very pretty and delicious.
