Goodbye!

Sweet Tea Born in South Carolina!

May 5th this website will be taken off public view and will be private only.  New recipes will be added to Hibiscus House Website http://www.hibiscushouseblog.com

I thought I'd publish one last post for the road.  It's been an adventure one in which I've certainly enjoyed.  I've met some very nice people along the way. Thank you for being here and I hope you'll come on over to Hibiscus House. We'll be cooking over there as well as gardening, raising backyard chickens, playing with the dogs, decorating, sewing, creating in the design room dolly's designs http://www.dollysdesigns.blogspot.com

I'll be busy writing a little cookbook and enjoying home and family.

I want to thank my 'Mama Dot' for teaching and giving me the love of cooking!  It is only fitting that I leave today with the following song from The Sound of Music.  Her favorite movie.  She took us to see it Five Times!

Take care and I'll see you at the main house website,

Important Information About Dolly Is Cooking Website!

I'll get right to the point.  For about a year now actually I've been contemplating combining this website with my other Hibiscus House.

If you are a follower I want to thank you for being there.  I want your opinion on this matter please.

The recipes on this site may not be published to the other.  The new recipes that I publish online will be on the other should I combine.  I may republish a few over there but not all by any means way too many for that.  I am thinking of writing a cookbook as well.

So please comment and let me know what you would like.  I'll think about it and if no response will definitely close this site down.

You can make a comment in the comment section below or contact me by email.  I do value your opinion.

Many thanks,
Sincerely,

Boiling Farm Fresh Eggs

Are you lucky enough to have them or find them? I sure hope so because there is nothing like the taste of them. They just make everything you cook with them so much better.
Look at the colors.  Aren't they beautiful?
They can be tricky to peel these wonderful eggs. Today we talk about ways to make them easier to peel.

Evaporated Milk Substitute

Evaporated Milk Substitution
Printable Recipe
* Note on evaporated milk:  I was out!  Yes me out!  I had to improvise.
I had Carnation Instant Non-Fat Dry Milk.  This is what I used to make it:

1 1/4 cups water
1 cup Carnation Dry Milk
whisk together
Use what you need for your recipe.  Save and refrigerate the rest for use later.

*If you do not have either you can take twice the amount of whole milk needed and cook slowly down until half the amount.  It will take time and you might just want to go to store to buy the evaporated milk..but it is a choice.*

Enjoy!

Pizza Easy With a Little Help

I don't make pizza much and have never made a crust until recently.  It is simply too easy to order them.  On this day I wanted to try to make it at home, I had my little ones here and they kept talking about pizza so I thought well, why not.

CHEF'S Maslin Pan Product Review

Chef's Catalog has for years been one of my favorite online shops.  Recently they closed down and it is with sadness I review one of the items I was able to buy before they closed.  Did you shop with them?  I will have to find a new favorite kitchen store but it won't be the same.

Chef's started in 1979 and sold upscale cookware, cutlery, kitchen electronics and tools.  John Medved bought the store in 2004 from The Neiman Marcus Group, Inc. Target bought Chefs in 2013. You can read more about it Here

This is fast becoming one of my all time favorite pots!  It is the CHEFS Maslin Pan with Lid, 6-quart.  I love it! Join me as I do a product review.

Brisket Smoked on Gas Grill

I hope you are lucky enough to have a smoker, it has to be easier than smoking on a grill.  It is good to know that you can do it on a gas grill if you would like to though.  I don't proclaim to be a grill queen but can tell you this was my first time doing it and it was "fabulous!"

original NILLA banana pudding

I can remember watching as my mama would make the banana pudding, you know the recipe that was on the back of the Nilla Vanilla Wafer Box.  I can see her now stirring the egg, sugar, milk and vanilla mixture to make the homemade vanilla pudding.  Yes, a long time ago that is exactly how she made it until one day she decided to use the Jello Pudding to make it easier.  I watched everything she did from getting those little strings off of the bananas to placing the wafers in the dish and making that fabulous meringue on top.  I'll never forget that.
Today join me as I step back in time and make one to share with you today.

Chicken Broth and Stock

Do you make your own chicken broth and stock?  I try to because everything tastes better with homemade.  Recipes are richer and so much more delicious than store bought, even though that has a place in the pantry as well.  We don't always have the time to make them.  Join me today as we talk about making them....

Sarrio's Spaghetti Sauce From Cookin' Isn't A Crime

This is an old recipe from many years ago that my husband put into a cookbook for the police force he was working with. The name of the cookbook is "Cookin' Isn't A Crime".  It is full of recipes that I'm going to try.  This recipe is quick and easy to put together and then you can simmer for hours if you wish.  It adds a special touch to a purchased sauce.  Chuck says use only Ragu because Prego and other spaghetti sauces are just not the same.

Sausage Egg Scramble

Have you ever made this before?  Probably but if not how easy and delicious it can be with a really good bulk sausage and farm fresh eggs.  You must use good ingredients in order to make any dish delicious!
Do you like breakfast at all times of the day?  We are known to have breakfast for supper as we call it here in the south what most call Dinner.  Of course this is very delicious for breakfast also.
Simple with few ingredients that is what I like and try to share on this site.  This recipe is one of the simplest in the Quick and Easy Section.

Flour Dough Hoecake

I found this Old Fashioned Recipe in the draft menu of my website and thought it was time to share it with you.
This is something I haven't thought about in years, although my mama made it quite often.  She would especially do it with leftover biscuit dough.  I think she had a fondness for it from her childhood because her mother and grandmother had made them as well.  We were so spoiled with her pan baked biscuits that I feel she didn't have her hoecakes as often as she would have liked.
Today I share the making of a biscuit dough hoecake.  join me won't you....

Cooking Black-Eyed Peas

Do you like dried beans and peas?  Here in the south we were definitely raised eating them.  Those along with  fresh greens such as collards, mustard, turnips etc.
I remember watching my grandma cooking them on her wood stove.  It was so hot and I can hear the wood burning and crackling now.  That stove cooked some of the best food I'd ever put into my mouth.
When we were children we were made to eat lots of vegetables and things that were good for us.  I remember fruit wasn't as abundant then as it is now, so it was quite the delicacy.  We would all get so excited over there at Christmas time.  Granddaddy would go to the local grocery and order box after box of fruit along with nuts and a little candy to give to all the family at that joyous time.
Excuse me I went down memory lane, food can do that you know remind you of good times with special people.  Speaking of that I miss my mama so much and she was such a good cook.  It was second nature to her fixing a meal at a moment's notice.  I spent most of my time as a child standing and watching her work her magic in the kitchen.  I started this post when mama was still living a few years ago and found it the other day in the draft menu.  So "Dot" here's to you!  Cooking Black-Eyed Peas.

Chicken Breasts in Slow Cooker for Use in Various Recipes

Today is just a simple, easy way to cook chicken breast in a slow cooker.  You can of course use the thighs and legs if you wish.  I just happen to use the breasts in my recipes.  This can be used in many recipes.  You of course can use fresh garlic, onion, and chili peppers, but today this is for quick and simple, plus I'm trying to use up those huge containers of minced onions and granulated garlic in my pantry.

Old Fashioned Stewed Potatoes

.
Here in the South we really enjoy quite a few recipes and some are handed down through many generations.  This is one such recipe my great grandmother, grandmother and mother all made.  I used to make them more but revisited it today.
It is so very cold here in South Carolina today.  We have ice and snow storms all around us.  I needed something warm and these sounded like the thing to make.
I don't want you to be confused this is not potato soup.  It is cubed potatoes stewed sometimes with onions and sometimes not.  A white sauce is made and they are simply seasoned with salt, pepper and an oil of some type.  You may use bacon, fat back, butter, olive oil or you may use some of the oil used in cooking some type of meat.  We usually have these potatoes as a side dish. They are especially good with fried chicken, pork chops, country fried steak or any type meat you would choose to make.  That is what I was speaking of when I said oil from the pan of a meat fried.  You can decide which type oil to use.

One Crust Chicken Pot Pie

Today I share a one crust chicken pot pie recipe with you.  Yes, I know it seems like cheating to make one without the bottom crust but it will be better for us.  I did make it with a Sam's Club Rotisserie Chicken.  I'm trying to cut some calories and make a lighter version.  One crust no potatoes lots of vegetables and vegetable broth or water to replace some of the broth.  You can just make a vegetable pot pie without meat or chicken broth and use no butter only olive oil for an even lighter pie.  Now doesn't that sound nice and easy?

Say Goodbye to Chick Fil A Coleslaw Hello to Make it Yourself!

Are you sad?
I am, I love their cole slaw!
They have given us the next best thing and that is their recipe.
It will be gone from their restaurants January 18th.
We will (sigh) have to make our own.
